Why do bluefish have a bad reputation of being poor tablefare? I think they are great. It helps to fillet them soon after catching and remove the dark meat. I've found they are excellent fried, broiled, grilled, or even made into a tuna-type salad. What do others think?

I grew up eating them. Always thought they were fine. I still think they are the best fish to put in the smoker.

I have no problem with them. The larger ones tend to be stronger so I cook them in a tomato based sauce to cut down on the strong taste. Ate plenty of them when I lived in RI.

Blufish are great for grilling, broiling, or saute'. My favorite way to eat them is to smoke them. You gotta brine these babies for 8 hours or so, Here is a good recipe for brine

2 quarts water, divided

1 cup granulated sugar

3/4 cup coarse kosher salt

1 1/2 tablespoons crushed black pepper

1 teaspoon granulated garlic

2 tablespoons Worcestershire sauce

1/4 cup dark brown sugar

4 bay leaves

Heat all in a sauce pan until dissolved, Let cool and brine the fish filets in it. Put on the smoker for about 2 hours or until done ( depending on heat)

Since their have been some big blues being caught. Dont forget to cut
the cheeks out. It's the best part.

smile.gif Without a doubt the secret is to keep them cold. The soft meat spoils quickly. If kept cold and fileted early, and the dark strip cut out, they are as good as anything out there.

I can vouch for Jeff's brine recipe above. I tried it and it is excellent. I ended up smoking 6 large fillets and still have a few sealed in the freezer. The smoked fish is excellent when made into a dip or just eaten plain. Try it...you won't regret it.

After removing the red meat, I have dipped them in Italian dressing and then coating with Italian breading and frying in olive oil. Very good stuff. I'll be trying the smoking recipe from above as well.

I mixed bluefish and rockfish together last night and made cakes. I couldn't tell the difference at all and there was more bluefish than rockfish meat. Very tasty.
