Rockfish Cakes

I tried this one lastnight for the first time and it was delicious.

Take about 1 lb of meat and cut out all the red meat.

Boil in water until done or cooked medium.

Put meat into a big mixing bowl and let cool in the fridge until it is about room temperature or slightly colder.

Mash up all the meat and add 1 egg, about a tablespoon of mayo, .5-.75 tablespoon of mustard. (I only had yellow mustard so that's what I used, I'm sure a deli mustard would have been better) Then add 8 Ritz crackers crushed up.

Mix together well and add your favorite spices. I used Old Bay, cayenne pepper, and lemon pepper.

Form into cakes and put on a plate to cool in the fridge for 20 minutes.

Cook in a pan with oil on medium high heat until golden brown on both sides.

That does sound good, thanks for the idea. We'll be having striper tomorrow night and I've forwarded the recipe to the wife.

Tried this one last night again and it was better than the first time. The most important thing is to keep all the juices inside when you are forming the cakes.

I tried a little variation to this the other night.

Make them into little balls, maybe the size of a golf ball, add some crumbs to the outside, and put them in the deep frier.

i am kinda new to the board, and just havent posted comments before, but this recipe needed recognition. after catching my first of hopefully many stripers this year, i wanted to try something new. ive seen this recipe and decided to wing it. i would have to say this is the best type of cakes i have tryed ever. ive worked in many reseraunts and have tryed a lot, but this one gets my stamp of approval. bow.gif

Welcome. It's the only way I cook the smaller rockfish.

The spices are really up to you. I usually now just use Old Bay. If you don't have Ritz crackers try saltines (spelling?) or just regular bread crumbs. If you want more of fried outside add the crumbs to the outside as well.

yeah i kept it crispy by pan searing both sides and then broiling it to cook the inside. thanx for the tips

You can also just get a package of old bay crab cake mix. Mix it up per the directions and it makes the best fake crab cakes around

Made cakes last night with Zatarian (sp?) mix and they were great.

Great recipe! I always have to change things up though. I took my fish, seasoned it and cooked it on my wood pellet grill first(give them a graet smokey wood flavor). After the grilling followed your recipe. My wife wants me to go fishing so we can have more. I told her I would go fishing if I had to, ya know, for her. action-smiley-033.gif

Ya I change it up too. I like to season it then steam the fish in a steamer instead of poaching it in the boiling water. I ran out of fish on Monday, hopefully I can re-stock on Saturday.
