Yea, the commercial guys have to prep them like that as soon as they come out of the water to get top dollar at the dock.

i was reading the comments on the video on the youtube page and it say



have you tried useing a chain saw?

and the reply was
yes but it just messed up the saw

I've used a reciprical saw on Wahoo...it made chopping up that 83# Wahoo easy !....Bob

For starters I put the King or Wahoo on my lathe to get all the scales off, then I steam clean the debris off the remaining fish with my Graco 3000 psi pressure washer .To dry the meat off I use my Sthil Back pack blower.I then put the fish on my Dewalt Miter Box and cut the steaks in 22.5 degree opposing angles so the meat interlocks on the grill . To apply the Sauce I use an old school oil spout.I spread the sauce with a Goodie paint brush and this helps keep all my power tools from collecting dust in the winter months.

I use a 9" scalloped offset sandwich knife made by DR to steak them( http://www.dexter-russell.com/Search_detai...ame=sofgrip.asp ). Seems weird but it works. I just filet the bigger ones.

By the way...the easiest method I use to clean my fish quickly with no muss, no fuss and hardly get my hands dirty....is to use Don!!!!

Yeah he is not cleaning him, just killing the brain. They might cut a slot to expose the brain and run a heavy section of mono into the spine to further shut down the nervous system.

They clip the tips of the tail, but leave the curved fork area for measuring.
