Everyone has a diff. way of doing It.....I like to sprinkle my bait try with ballyhoo birne you can get at almost any tackle shop I put my hoos belly up & salt them down good....Now you will hear that It makes them to stiff....Thats bull $%#^ they work perfect....The key Is keeping them clod get a good cooler iceytec or something like that & a good bait tray...Hope this helps.....Oh ya I do my bait the night before about 4:00 pm....Good luck.
Mega Bite
I like to pick Hoos that have red tips on their bills,no red juice in the pack and have a small amount of green poop near their bodies, clear eyes and a nice blueish silver color. Then I put them in a cooler full of ice 24 hours before a trip to slow thaw them.Like Off the hook said I also rig mine the nite before If I can. I usually crack their backs squeeze the poop out then carefully seperate the backbone from the meat by pinching down the spine. After they are rigged up I put a layer of ice about 6 inches deep, lay a hotel towell on the ice put a few dozen rigged baits on the towell. Then I sprinkel kosher salt and baking soda on the baits lay another hand towell over top the baits and repeat the process this is how I was taught to do it when I was a Mate and still do it like that 25 years later. Now they have Stainless trays and premade preservatives both of which are fine if not better than the old way.

Scooter
Just like megabite except on the thaw out i mix one box of kosher salt and half a small box of soda too a five gal bucket of ice and water and then rig em and put them in a zip lock the two gal type that has salt and soda in it where I do the shake and bake to get them coated good then submerge the bag to get the air out and it also forces the brine kind of like a marinade and man it nakes them tough as leather
