Personally
I like them if they are fresh, by fresh I mean caught and ate that day.
Although, Ive eaten mackeral as sushi that was good tasting and I know it was not caught that day and had been frozen.
Maybe there is a way to insure fresh taste that I do not know?

Bleed and gut as soon as you catch them.Pack them in ice and keep cold until you eat it.I dont like King but I hear Frank R. can cook one that tastes awesome off the grill.

ya if you mix up a sauce with ketchup, vinegar, and a small amout of BBQ put the steaks on the grill as low of a flame as possible and brush that sauce on each time you flip the steak keep doing this for 1 hour or till its done its the best

I just got done eating some king mackeral. It is very good, good enough to get away with selling king as wahoo in stores. I put lemon pepper, old bay, Italian seasoning, and butter on it. Then I wrap it up in foil and grill it.

The king definetly was not skinny, but the scale was probably incorrect. It is an old digital scale that has broken several times and has been rigged to work but I guess it is incorrect. I will have to get a new scale.

ya and when they get big you can cut your stakes to the bone then use the hack saw
