Trigger is VERY good! In fact, my kids prefer it over flounder. Very tough skin makes filleting a challenge, but once you get the hang of it, it's not so bad.

I prefer Triggerfish over flounder myself...filleting requires a very sharp knife like BB mentioned, but worth the effort.

I use an electric fillet knife on triggers, cut em and skin em pretty quick without dulling your good fillet knives....great on the table....

One of the best to eat. Their skin will pull off when the fillet is still on the fish just like a dolphin.
