I cooked-up some wahoo last night using Bobdu's approach. Little olive oil and a liberal helping of salt and pepper. 4 minutes a side on med. heat on the gas grill.

Give it a try next time you get Mr. Hoo. Very Very good fish and an excellent way to cook it.

I used this mix I just found called Montreal Steak mix/seasoning on the Mako steaks we ate last weekend. It's a mixture of cracked pepper, sea salt, onion powder and garlic powder. Good stuff....in your supermatket next to the other grill seasonings.....a McCormick product.

I add straight sesamee seeds to this mix if it's a tuna steak but you gotta try it straight for mako and wahoo.....

We pan sear it on high heat in a skillet with a little olive oil ........which releases the peppers oil and mellows it a bit......tasty......try it.....if you don't like it you can sell it on E-bay for sure !

Baste it in olive oil and then use the Old Bay Rub that they have now. Mahi, tuna and wahoo have been awesome like this. Give it a try.
