Crispy Baked Flounder with Crusted Almonds

This is my favorite dish to make by far!! You will need.....

 

2 whole flounder fillets ( I cut the 2 whole fillets in half to make 4 portions )

Corn Flakes - Crushed Fine

Almonds - Crushed Fine

Lemon Pepper

Old Bay Seasoning

1 Cup Melted Butter

2 Eggs - Beaten

Milk

 

Put Flounder in a freezer bag and add enough milk to cover fish. Let it set in the refrigerator for 30 minutes to an hour ( this will make the fish moist and fluffy )

Preheat oven to 450* Use glass pan or cookie sheet. Spray well with canola or olive oil. Then coat each side of the Flounder fillet in the egg, and cover in cornflakes. Place fish in baking dish and sprinkle crushed almonds on top. Pour melted butter over the Flounder fillets. Add lemon pepper and old bay seasoning to taste. Cook for 15-20 minutes or until fish flakes. Serve warm with potatoes and a vegetable...Enjoy!
